Here’s a scrumptious Loaded Broccoli Soup recipe that’s
creamy, comforting, and filled with vegetables and taste. I’ll include a barely
more healthy “loaded” twist with cheese and optional toppings.
Ingredients (Serves
four-6)
Soup Base:
4 cups broccoli florets (clean or frozen)
1 medium onion, chopped
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced (non-obligatory)
four cups vegetable broth or fowl broth
1 cup milk (or cream for extra richness)
1-2 tbsp olive oil or butter
Salt and pepper, to flavor
1/4 tsp nutmeg (non-compulsory, adds warmth)
Cheesy “Loaded”
Additions:
1 cup shredded cheddar cheese (or a mix of cheddar +
mozzarella)
half cup cooked bacon bits (elective, can substitute with
roasted chickpeas for vegetarian alternative)
1/2 cup chopped inexperienced onions
half of cup croutons or toasted bread for topping
Instructions
1. Sauté the greens:
In a big pot, heat olive oil or butter over medium warmth.
Add onion, garlic, carrots, and celery. Sauté till softened, approximately
five–7 mins.
2. Cook the broccoli:
Add broccoli florets and broth. Bring to a boil, then reduce
heat and simmer for 10–15 minutes, till broccoli is smooth.
3. Blend the soup:
Use an immersion blender (or transfer in batches to a
blender) to puree the soup till smooth. If you want it chunkier, mixture
partially.
4. Add milk &
cheese:
Return soup to the pot, stir in milk/cream and shredded
cheese. Cook on low till cheese melts and soup is creamy. Season with salt,
pepper, and nutmeg.
Top every bowl with bacon bits (or roasted chickpeas),
chopped green onions, and croutons. For extra indulgence, sprinkle a bit more
shredded cheese on top.
Tips & Variations:
Vegan version: Use plant-based milk, vegan cheese, and
bypass bacon or use smoked tempeh bits.
Extra creaminess: Add 1/four cup cream cheese or Greek
yogurt at the same time as blending.
Flavor increase: Add a pinch of smoked paprika or a drizzle
of garlic-infused oil on top.
If you need, I can also give you a brilliant-smooth one-pot
version that chefs in beneath half-hour and is extremely creamy without using
cream.
Do you need me to do this.
