Butternut Squash Soup with Apple Grilled Cheese Sandwiches
This comfy meal combines the candy, nutty taste of butternut
squash soup with the crisp, melty goodness of apple grilled cheese sandwiches—a
perfect pairing for fall or any chilly day.
Butternut Squash Soup
Ingredients:
1 medium butternut squash, peeled and cubed
2 medium carrots, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 apple (Granny Smith or Honeycrisp), peeled and chopped
3 cups vegetable or hen broth
1/2 tsp cinnamon
1/four tsp nutmeg
1–2 tbsp olive oil
Salt and pepper to flavor
Optional: 1/4 cup cream or coconut milk
Instructions:
1. Roast the vegetables: Preheat oven to 400°F (2
hundred°C). Roast 25–30 minutes until soft.
2. Sauté aromatics: In a big pot, warmth a little oil and
sauté onions and garlic till fragrant and soft.
3. Combine: Add roasted squash, carrots, chopped apple,
cinnamon, nutmeg, and broth to the pot. Simmer 10–15 mins to meld flavors.
4. Blend: Use an immersion blender or transfer to a regular
blender. Blend till clean and creamy.
5. Finish: Stir in cream or coconut milk for richness.
Adjust seasoning with salt and pepper.
Tip: A drizzle of maple syrup or a sprinkle of smoked
paprika provides intensity and heat. Garnish with fresh thyme or parsley.
Apple Grilled Cheese Sandwiches
Ingredients:
2 slices of bread (sourdough or complete grain)
1–2 slices sharp cheddar, Gruyère, or your favorite melting
cheese
half apple, thinly sliced
Optional: honey, Dijon mustard, or caramelized onions
Instructions:
1. Assemble the sandwich: Butter one aspect of every bread
slice. On the unbuttered aspects, layer cheese and apple slices. Add a touch of
honey or mustard if preferred. Close the sandwich with buttered sides out.
2. Grill: Heat a skillet over medium heat. Cook three–4 mins
in step with facet, urgent lightly, till golden brown and the cheese melts.
3. Serve: Slice diagonally and serve along the soup.
4. Variation: Caramelize the apple slices or onions in a
touch butter earlier than adding to the sandwich for additonal sweetness and
depth.
