Herbed Chicken with Beets and Brussels Sprouts

This dish is colorful, wholesome, and packed with taste. Tender, herbed fowl pairs perfectly with candy roasted beets and caramelized Brussels sprouts.

Ingredients (Serves 2–three)

Chicken & Herbs:

2 hen breasts or thighs (bone-in optional)

1 tbsp olive oil

1 tsp dried thyme or 1 tbsp clean, chopped

1 tsp dried rosemary, beaten

1 garlic clove, minced

Salt and pepper to flavor

Zest of ½ lemon (optionally available)

Vegetables:

2 medium beets, peeled and reduce into wedges

two hundred g Brussels sprouts, trimmed and halved

1–2 tbsp olive oil

Salt and pepper to flavor

1 tsp balsamic vinegar (elective)

Garnish (optionally available):

Fresh parsley or dill, chopped

Drizzle of greater virgin olive oil

Instructions

1. Marinate the Chicken:

Mix olive oil, thyme, rosemary, garlic, lemon zest, salt, and pepper. Rub over chicken. Let it relaxation 15–30 minutes for extra flavor.

2. Prepare Vegetables:

Preheat oven to 200°C (four hundred°F). Toss beets and Brussels sprouts with olive oil, salt, and pepper. Spread on a baking tray.

3. Roast Vegetables:

Roast for 25–half-hour, tossing halfway. Beets must be gentle; Brussels slightly caramelized.

 4. Cook Chicken:

Heat a skillet over medium-excessive heat. Sear bird 3–4 minutes in keeping with facet till golden. Finish in oven (identical tray if room allows) for 12–15 minutes, till bird reaches seventy five°C (165°F) internally.

5. Serve:
