This smooth one-pan dinner combines conventional Caprese flavors from Italy — gentle bird, juicy tomatoes, fresh basil, and creamy mozzarella — all roasted together on a single sheet pan for easy prep and smooth cleanup. It’s ideal for busy evenings and can be without difficulty packed with more veggies.

🧺 Ingredients

2–3 boneless, skinless fowl breasts (or thighs)

2 cups cherry or grape tomatoes, halved

1–2 cups mixed vegetables (zucchini, bell peppers, broccoli, green beans, mushrooms, or purple onion)

2 tablespoons olive oil

three garlic cloves, minced

Salt and freshly floor black pepper, to flavor

1 teaspoon Italian seasoning (non-obligatory)

150–two hundred g sparkling mozzarella, sliced or torn

Fresh basil leaves, kind of torn

Balsamic glaze (optionally available, for completing)

👩🍳 Instructions

1. Preheat the oven to 2 hundred°C (four hundred°F). Line a huge sheet pan with parchment paper or foil.

2. Season the bird:

Place the fowl in the middle of the pan. Drizzle gently with olive oil and season with salt and pepper on each sides.

3. Prepare the greens:

In a bowl, toss the tomatoes and chosen veggies with the final olive oil, minced garlic, salt, pepper, and Italian seasoning if using. Spread them calmly across the hen.

4. Roast:

Place the sheet pan in the oven and bake for 20–25 mins, until the fowl is sort of cooked through and the veggies are soft and gently caramelized.

5. Add mozzarella:

Remove the pan from the oven. Top each piece of bird with mozzarella. Return to the oven for some other 5–7 minutes, or until the cheese is melted and bubbly and the fowl reaches an inner temperature of approximately seventy five°C (one hundred sixty five°F).

6. Finish and serve:

Scatter sparkling basil over everything. Drizzle with balsamic glaze if desired. Serve hot.

Spoon over quinoa, brown rice, or couscous for a hearty meal.

Pair with roasted infant potatoes or crusty bread.

For a lighter, extra vegetable-forward version, update half the chook with thick zucchini slabs or cauliflower florets and roast alongside.
