Delicata Squash & Tofu Curry


 

This curry is creamy, fragrant, and filled with vegetables and protein. The delicata squash adds herbal sweetness, whilst tofu makes it hearty and fulfilling.

 1 medium delicata squash, halved, seeds eliminated, sliced into ½-inch crescents

1 block (approximately 400g) corporation tofu, pressed and cut into cubes

1 tbsp coconut oil or neutral oil

1-2 inexperienced chilies, sliced (optionally available)

1 tbsp tomato paste

Juice of ½ lime

Fresh cilantro, chopped, for garnish
