Caprese Salad with Basil Oil
This dish is a clean, colourful take on the traditional
Italian Caprese Salad, superior with tender grilled chicken and a fragrant
basil oil. It’s best for a mild lunch or dinner and is packed with protein,
nutrients, and healthy fat.
Ingredients (Serves
2)
For the Salad:
2 boneless, skinless chicken breasts
2 cups cherry tomatoes, halved
200 g sparkling Mozzarella (sliced or mozzarella balls)
1 cup sparkling Basil leaves
1 cup mixed greens (optionally available)
1 tbsp olive oil
Salt and black pepper
For the Basil Oil:
½ cup sparkling basil leaves
¼ cup greater-virgin olive oil
1 small garlic clove (optionally available)
Pinch of salt
Instructions
1. Make the Basil Oil
Blend until clean.
Optional: strain the aggregate for a clear oil or preserve
it slightly textured for a extra rustic look.
Set apart.
2. Grill the Chicken
Brush the bird breasts with olive oil and season with salt
and pepper.
Grill fowl for 5–6 minutes in keeping with aspect, till
cooked thru and golden.
