Moroccan Chickpea Stew

Ingredients

2 tbsp olive oil

1 big onion, chopped

3 garlic cloves, minced

2 medium carrots, diced

1 pink bell pepper, diced

1 zucchini, diced

1 tsp ground cumin

1 tsp ground coriander

1 tsp smoked paprika

½ tsp floor cinnamon

¼ tsp cayenne pepper (optionally available)

Salt and black pepper, to taste

1 can (14 oz. / four hundred g) diced tomatoes

2 cans (14 oz / four hundred g each) chickpeas, drained and rinsed

2 cups vegetable broth (or water with bouillon)

½ cup dried apricots, chopped (elective)

¼ cup clean cilantro or parsley, chopped

Juice of one lemon

Instructions

1. Sauté aromatics

 Add onion and garlic, sauté for three–4 minutes till softened and fragrant.

2. Add vegetables & spices

Stir in carrots, bell pepper, and zucchini. Cook for 5–7 mins until barely tender. Add cumin, coriander, smoked paprika, cinnamon, cayenne (if the use of), salt, and black pepper. Stir to coat vegetables lightly with spices.

 3. Simmer stew

Add diced tomatoes, chickpeas, and vegetable broth. Cover and cook 20–25 minutes, stirring every so often, until veggies are completely smooth and the flavors meld.

4. Add sweetness & herbs

Stir in chopped apricots for a diffused sweetness. Let simmer five greater mins. Remove from heat, then stir in lemon juice and chopped cilantro or parsley for a clean, shiny flavor.

5. Serve

Serve warm with couscous, rice, or heat, crusty bread. This stew additionally tastes superb the following day as leftovers.

Tips for Best Results

Roast chickpeas for additonal depth: Toss chickpeas with a bit olive oil and paprika, roast at four hundred°F (2 hundred°C) for 10–12 minutes earlier than including to the stew.

Add vegetables like candy potatoes, eggplant, or butternut squash for heartier texture.
