Sheet-Pan Salmon with
Sweet Potatoes & Broccoli
This is a healthful, easy, and flavorful one-pan meal. Sweet
potatoes convey natural sweetness, broccoli provides crunch and nutrients, and
salmon provides protein and omega-3s. Cooking the whole lot on one sheet pan
makes cleanup simple.
Ingredients (Serves
2–three)
2 salmon fillets (6–8 ouncesevery)
1 medium candy potato, peeled and cut into 1-inch cubes
1 small head of broccoli, cut into florets
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
½ tsp salt (alter to taste)
½ tsp black pepper
1 tsp dried thyme or rosemary (non-compulsory)

Instructions
1. Prepare the candy
potatoes:
In a big bowl, toss candy potato cubes with 1 tbsp olive
oil, ½ tsp garlic powder, ½ tsp paprika, ¼ tsp salt, ¼ tsp pepper, and herbs if
the use of. Spread evenly at the sheet pan. Roast for 10 minutes.
2. Add broccoli:
While the sweet potatoes start roasting, toss broccoli
florets with the remaining 1 tbsp olive oil, a pinch of salt, pepper, and a

potatoes.
3. Prepare salmon:
Pat salmon dry and brush gently with olive oil. Season with
final garlic powder, paprika, salt, and pepper. Place fillets on the sheet pan
