3 garlic cloves, minced

1-inch piece ginger, minced

2 tbsp curry powder (adjust for warmth)

1 tsp ground cumin

1 tsp floor coriander

1/2 tsp turmeric

half tsp chili powder (non-compulsory)

1 can (14 ounces / 400 ml) diced tomatoes

1 cup beef broth or water

half cup coconut milk (non-compulsory for creaminess)

2 medium potatoes, peeled and cubed

2 carrots, sliced

Salt and pepper, to flavor

Fresh cilantro, for garnish

Instructions

1. Sear the Beef (Optional but Recommended)

Heat oil in a skillet over medium-high warmth. Brown red meat cubes on all aspects, about three–4 minutes in line with aspect. This seals taste. Transfer to the slow cooker.

In the same skillet, cook onion, garlic, and ginger till gentle, approximately three–4 mins. Stir for 1–2 mins till aromatic.

 3. Combine in Slow Cooker

Add the sautéed mixture to the pork. Pour in diced tomatoes, beef broth, and coconut milk. Add potatoes and carrots. Season with salt and pepper.

4. Slow Cook

Cover and prepare dinner on low for 7–eight hours or high for 4–five hours, until pork is tender and greens are cooked.

5. Finish & Serve

Taste and modify seasoning. Garnish with fresh cilantro.

Tips & Variations

Add a cinnamon stick or cardamom pods for greater aroma.

Swap pork for lamb or hen if desired.

Extra vegetables like bell peppers or peas may be introduced in the last hour of cooking.

This sluggish-cooker red meat curry is perfect for a cozy meal, easy to make ahead, and full of warming spices. The beef turns into smooth, and the sauce absorbs the fragrant flavors fantastically.
