Slow-Cooker Kale & Sausage Stew

Ingredients (Serves four-6)

1 lb (450g) sausage (Italian, bird, or your preference), sliced into 1-inch portions

1 medium onion, diced

3 cloves garlic, minced

three big carrots, peeled and chopped

2 stalks celery, chopped

1 can (14.5 ounces / 410g) diced tomatoes

four cups (1 liter) chook or vegetable broth

1 tsp dried thyme

1 tsp smoked paprika

½ tsp crushed purple pepper flakes (optionally available)

Salt and black pepper, to taste

1 bunch kale, stems eliminated and leaves chopped

1 can (15 oz / 425g) cannellini beans or white beans, tired and rinsed

1-2 tbsp olive oil

Instructions

1. Optional Sausage Browning:

Heat a skillet with olive oil over medium warmth. Brown sausage portions for three-five minutes till barely crisp. Browning adds taste however isn't always vital.
