Turkey Noodle Soup
A warm, comforting soup ideal for the use of leftover turkey
or making from scratch. Packed with vegetables, gentle turkey, and hearty
noodles, this soup is both nourishing and pleasing.
Ingredients (Serves
four–6)
2 cups cooked turkey, shredded
8 cups turkey or hen broth
2 medium carrots, sliced thinly
2 celery stalks, sliced
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried parsley (or 2 tsp fresh, chopped)
half of teaspoon black pepper
Salt, to flavor
2 cups egg noodles (or desired pasta)
1–2 tablespoons olive oil
Optional: 1 bay leaf, a squeeze of lemon juice
Instructions
1. Prepare the
Vegetables:
Heat olive oil in a huge pot over medium warmness. Add
onions, carrots, and celery. Cook for 5–6 mins until softened. Add garlic and

Seasonings:
