Turkey Noodle Soup

2 cups cooked turkey, shredded

8 cups turkey or hen broth

2 medium carrots, sliced thinly

2 celery stalks, sliced

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley (or 2 tsp fresh, chopped)

half of teaspoon black pepper

Salt, to flavor

2 cups egg noodles (or desired pasta)

1–2 tablespoons olive oil

Optional: 1 bay leaf, a squeeze of lemon juice

Instructions

1. Prepare the Vegetables:

Heat olive oil in a huge pot over medium warmness. Add onions, carrots, and celery. Cook for 5–6 mins until softened. Add garlic and sauté 1 more minute till fragrant.

2. Add Broth and Seasonings:
