20-Minute Shrimp Scampi with Zucchini
Shrimp scampi is a conventional
Italian-American dish regarded for its rich garlic, lemon, and butter sauce.
This quick version swaps conventional pasta for fresh zucchini, creating a
lighter meal that’s geared up in about 20 mins. It’s best for busy evenings

1 lb (450 g) shrimp, peeled and
deveined
2 medium zucchini, spiralized or
reduced into thin strips

¼ teaspoon black pepper
2 tablespoons lemon juice
2 tablespoons butter
2 tablespoons chopped sparkling

Instructions
1. Prepare the zucchini noodles.
If using a spiralizer, flip the
zucchini into noodle-like strands. If you don’t have one, use a vegetable
peeler or knife to create skinny ribbons. Pat them gently with paper towels to
take away excess moisture.
2. Cook the shrimp.
Heat 2 tablespoons olive oil in a
massive skillet over medium-high warmth. Add the shrimp in a single layer.
Season with salt and pepper. Cook for about 1–2 mins in the side until the
shrimp turn red and opaque. Remove them from the pan and set aside.
Three. Make the garlic scampi sauce.
Cook for approximately 30 seconds
until aromatic, being cautious not to burn the garlic any longer.
Four. Add lemon and butter.
Reduce the heat barely and add the
butter and lemon juice. Stir till the butter melts and combines with the garlic
and oil, creating a silky sauce.
Five. Cook the zucchini noodles.
Add the zucchini noodles to the
skillet and toss them gently in the sauce. Cook for approximately 2–3 minutes
until barely softened; however, be gentle. Avoid overcooking, as zucchini
releases water speedily.
6. Combine everything.
Return the shrimp to the skillet.
Toss everything together so the shrimp and zucchini are lined within the
garlic-lemon butter sauce. Cook for some other minute to warm through.
7. Garnish and serve
Remove from warmth and sprinkle with
clean parsley and Parmesan cheese if desired. Serve right away with lemon
wedges for additional brightness.
Tips for Best Results
Use fresh shrimp each time, if
viable, for the fine flavor and texture.
Do no longer overcook the zucchini,
