30-Minute Mini Meatloaves with Whipped Cauliflower & Green Beans

If you’re looking for a comforting, satisfying dinner that comes together quickly, these mini meatloaves with whipped cauliflower and green beans are an excellent choice. Inspired by the classic flavors of traditional meatloaf, this recipe transforms the hearty favorite into smaller portions that cook faster while still delivering rich flavor. Paired with creamy mashed cauliflower and crisp green beans, the meal feels balanced, wholesome, and perfect for busy weeknights.

Why Mini Meatloaves?

Mini meatloaves cook more quickly than a traditional full loaf, making them ideal for a 30-minute meal. Because they are individually portioned, they also develop more caramelized edges and hold moisture well inside. This method ensures juicy meatloaf with a delicious glaze in less time.

Ingredients

For the Mini Meatloaves

450 g (1 lb) ground beef or turkey

½ cup breadcrumbs

1 egg

¼ cup milk

¼ cup finely chopped onion

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

For the Glaze

3 tablespoons ketchup

1 tablespoon brown sugar

1 teaspoon mustard

For the Whipped Cauliflower

1 large head of cauliflower, chopped

2 tablespoons butter

¼ cup milk or cream

Salt and pepper to taste.

For the Green Beans

2 cups fresh green beans, trimmed

1 tablespoon olive oil or butter

1 clove garlic, minced

Salt and pepper to taste.

Instructions

1. Prepare the Oven

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease a baking dish.

2. Make the Meatloaf Mixture

In a large bowl, combine the ground meat, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until just combined. Overmixing can make the meatloaf dense.

3. Shape the Mini Loaves

Divide the mixture into four equal portions and shape them into small oval loaves. Place them on the prepared baking sheet.

4. Add the Glaze

Mix the ketchup, brown sugar, and mustard in a small bowl. Spread the glaze evenly over the tops of the mini loaves.

5. Bake

Bake for 18–20 minutes, or until the meat is fully cooked and reaches an internal temperature of 74°C (165°F).

6. Cook the Cauliflower

While the meatloaves bake, place the cauliflower in a pot with a small amount of water and steam for about 10–12 minutes until very tender.

7. Make the Whipped Cauliflower

Drain the cauliflower well, then blend it with butter, milk, salt, and pepper using a blender or food processor until smooth and creamy. The texture should resemble light mashed potatoes.

8. Prepare the Green Beans

Heat olive oil or butter in a skillet over medium heat. Add the garlic and sauté for about 30 seconds, then add the green beans. Cook for 4–5 minutes until tender but still bright and slightly crisp. Season with salt and pepper.

Serving Suggestions

Serve each mini meatloaf alongside a generous scoop of whipped cauliflower and a portion of sautéed green beans. The creamy cauliflower balances the savory richness of the meatloaf, while the green beans add freshness and color.

Tips for Success

Use lean meat to prevent excess grease.

Finely chop the onion so it blends smoothly into the meat mixture.

For extra flavor, add grated Parmesan or chopped herbs like parsley to the meat mixture.

This quick dinner combines comfort and nutrition in one satisfying plate. With tender mini meatloaves, silky cauliflower, and vibrant green beans, it’s a wholesome meal that feels both classic and modern—perfect for any busy evening.
