Ingredients

500–600 g Brussels sprouts, trimmed and halved

2 tablespoons butter

2 tablespoons all-purpose flour

1½ cups milk (heat)

½ cup cream (non-compulsory for additional richness)

2 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon salt (modify to flavor)

½ teaspoon black pepper

½ teaspoon mustard powder (elective, provides depth)

1 cup shredded cheddar cheese (or mozzarella mix)

½ cup grated Parmesan cheese

½ cup breadcrumbs (for topping)

1 tablespoon olive oil or melted butter (for topping)

Instructions

1. Prepare the Brussels Sprouts

Preheat oven to 190°C (375°F).

Bring a pot of salted water to a boil.

Add Brussels sprouts and blanch for four–five minutes until barely tender.

Drain and locate in cold water, then drain again.

2. Make the Cream Sauce

In a pan, melt butter over medium warmth.

Add onion and prepare dinner until smooth.

Add garlic and cook dinner for 1 minute.

Stir in flour and prepare dinner for 1–2 minutes to shape a light roux.

Slowly whisk in warm milk to keep away from lumps.

Add cream, salt, pepper, and mustard powder.

Cook till the sauce thickens (approximately four–five mins).

Stir in half of the cheddar cheese till melted.

Place Brussels sprouts in a baking dish.

Tips

For a smoky taste, add a pinch of paprika or cooked bacon bits (optional).

You can blend in mushrooms or spinach for added greens.
