Cilantro Bean Burgers with Creamy
Avocado-Lime Slaw (Vegetarian Recipe)
Paired with a creamy avocado-lime
slaw, they make a vibrant, satisfying vegetarian meal that’s perfect for lunch
or dinner.
Ingredients
For the bean burgers:
1 can (400g) black beans or mixed
beans, drained and rinsed
1/2 cup breadcrumbs (or oat flour for
gluten-free option)
1/4 cup finely chopped onion
2 cloves garlic, minced
1/2 cup fresh cilantro, chopped
1 tsp ground cumin
1/2 tsp chili powder (optional)
1 tbsp soy sauce or salt to taste
1 tbsp olive oil (plus extra for
cooking)
1 tbsp lemon juice or water (for
binding if needed)
For the avocado-lime slaw:
1 cup shredded cabbage (green or
purple)
1/2 cup grated carrot
1 ripe avocado
1–2 tbsp lime juice
1 tbsp yogurt or plant-based yogurt
(optional for creaminess)
Salt and pepper to taste.
A pinch of chili flakes (optional)
Instructions
1. Prepare the bean mixture.
In a large bowl, mash the beans
using a fork or potato masher until mostly smooth but still slightly chunky.
Add onion, garlic, cilantro, cumin,
chili powder, soy sauce, and breadcrumbs. Mix well. If the mixture feels too
dry, add a small splash of water or lemon juice. If too wet, add more
breadcrumbs.
2. Shape the patties.
Divide the mixture into 4–6 equal
portions. Shape each into a firm patty using your hands. Press lightly so they
hold together well but are not overly compacted.
Place the patties on a plate and let
them rest for 5–10 minutes to firm up.
3. Cook the burgers.
Heat a skillet over medium heat and
add a little olive oil.
Cook patties for 3–4 minutes per
side until golden brown and slightly crisp on the outside. Avoid flipping too
early—let them form a crust first.
Alternatively, you can bake them at
200°C for 20–25 minutes, flipping halfway through.
4. Make the avocado-lime slaw
In a bowl, mash the avocado until
creamy but still slightly textured.
Mix in shredded cabbage and carrot
until everything is coated in the creamy dressing. Taste and adjust seasoning.
The combination of creamy avocado
and tangy lime gives the slaw a bright, refreshing flavor that balances the
savory burgers.
5. Assemble and serve
Toast burger buns if desired. Place
a bean patty on each bun and top generously with avocado-lime slaw. Add extras
like sliced tomato, cucumber, or chili sauce for more flavor.
Serve immediately while warm and
crispy.
