Creamy Lentil Sun-Dried Tomato Soup
Creamy Lentil Sun-Dried Tomato Soup
is a velvety, comforting, and nutritious dish that combines earthy legumes with
the candy-tangy depth of solar-dried tomatoes. It’s ideal for a cozy lunch or
dinner and works well as a vegetarian meal full of protein, fiber, and
ambitious Mediterranean flavors.
Ingredients
Lentils (red or green) – 1 cup
Olive oil – 2 tablespoons
Onion – 1 medium, finely chopped
Garlic – 3–4 cloves, minced
Sun-dried tomatoes – ½ cup, chopped
Carrot – 1 medium, diced (optional,
however adds sweetness)
Vegetable broth – 4 cups
Coconut milk or cream – 1 cup (for
creaminess)
Spinach – 1–2 cups, fresh
Salt and black pepper—to flavor
Smoked paprika or chili flakes – ½
teaspoon (optional)
Lemon juice – 1 tablespoon (for
brightness)
Instructions
1. Sauté the base
Heat olive oil in a large pot over
medium heat. Add chopped onion and cook dinner until soft and translucent. Stir
in garlic and cook dinner for any other 30–60 seconds till aromatic.
2. Add vegetables and lentils.
Add carrots and sun-dried tomatoes,
stirring well to coat them inside the fragrant base. Then add lentils and mix
the whole thing together.
3. Simmer the soup.
Pour in vegetable broth and bring
the aggregate to a boil. Reduce warmth and permit it to simmer for 20–25
minutes, or until the lentils come to be tender and gentle. Stir every so often
to save yourself sticking.
Four. Make it creamy.
Once the lentils are completely
cooked, stir in coconut milk or cream. This gives the soup its signature creamy
texture and smooth mouthfeel.
Five. Blend (non-obligatory)
For a smoother texture, use an
immersion blender to partly mix the soup. You can depart some chunks for a
country experience or combination absolutely for a silky consistency.
6. Add veggies and seasoning.
Stir in spinach and allow it to wilt
for two to three minutes. Season with salt, black pepper, and smoked paprika or
chili flakes for a gentle warmness.
7. Finish and serve
Add a dash of lemon juice just
earlier than serving to embellish the flavors. Serve warm with crusty bread or
garlic toast.
Flavor Profile
This soup has a balanced flavor: the
lentils provide a hearty, earthy base, at the same time as solar-dried tomatoes
add a candy and tangy richness. The creamy detail rounds the entirety out,
making it comforting without being heavy.
Tips
Use pink lentils for a faster
cooking time and smoother texture.
Add greater greens like zucchini or
bell peppers for more nutrients.
For a vegan version, use coconut
milk as opposed to cream.
This soup thickens as it cools—add a
bit of broth while reheating.
