Ingredients

250 g penne pasta

250 g medium shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup broccoli florets

1 small zucchini, sliced

1 cup cherry tomatoes, halved

half a cup of carrots, thinly sliced

half a cup of candy bell peppers, sliced

2 cups vegetable or fowl broth

1 cup heavy cream

half cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

half teaspoon crimson pepper flakes (non-obligatory)

2 tablespoons sparkling parsley, chopped

Juice of half of a lemon

Instructions

1. Cook the shrimp.

Heat 1 tablespoon olive oil in a large deep skillet or pot over medium warmth. Add the shrimp, season gently with salt and pepper, and prepare dinner for approximately 2 mins according to aspect till purple and just cooked via. Remove the shrimp from the pot and set aside.
