Bean Soup
Ham and Bean Soup is a classic,

2 cups dried white beans (inclusive
of navy beans or cannellini beans)
1–2 cups cooked ham, diced (or a ham

1 medium onion, chopped
2 carrots, diced
2 celery stalks, chopped
3–4 garlic cloves, minced
6–8 cups water or bird broth
1–2 bay leaves
1 teaspoon dried thyme (elective)
Salt and black pepper to flavor

Instructions
1. Prepare the beans.
If you are using dried beans, rinse
them properly and soak them overnight in plenty of water. This helps them
prepare dinner faster and end up softer. Drain earlier than cooking.
2. Sauté greens
In a big pot, heat oil over medium
heat. Add onion, carrots, and celery. Cook for about five–7 mins till they
begin to melt.
Three. Add ham and beans.
Add the diced ham (or ham bone) and

Pour in water or broth. Add bay

smooth and creamy. Stir now and again and add more water if wanted.
If the use of a ham bone, eliminate
it close to the stop of cooking, shred any meat off it, and return the beef to
the soup.
6. Final taste adjustment
Remove bay leaves. Taste the soup
and adjust salt and pepper as wanted. If you like a thicker soup, mash a few
beans in the pot.
