6–8 cups water or bird broth

1–2 bay leaves

1 teaspoon dried thyme (elective)

Salt and black pepper to flavor

1. Prepare the beans.

If you are using dried beans, rinse them properly and soak them overnight in plenty of water. This helps them prepare dinner faster and end up softer. Drain earlier than cooking.

2. Sauté greens

In a big pot, heat oil over medium heat. Add onion, carrots, and celery. Cook for about five–7 mins till they begin to melt.
