This Slow-Cooker Kale & Sausage
Stew is a hearty, comforting dish that’s best for busy days. It’s wealthy,
savory, and full of veggies, with soft kale and beans simmered in a flavorful
broth. You can make it mild or highly spiced, relying on your desire.
Ingredients (Serves 4–6)
300–400 g sausage (beef, chicken, or
beef), sliced into chew-sized pieces
1 large onion, chopped
three–four garlic cloves, minced
2 medium carrots, sliced
2 medium potatoes, diced
1 can (400 g) white beans
(cannellini or butter beans), tired and rinsed
1 can (400 g) diced tomatoes
3–4 cups vegetable or chicken broth
1–2 tablespoons olive oil
(optionally available, if browning sausage)
1 teaspoon smoked paprika
1 teaspoon dried thyme
1 bay leaf
Salt and black pepper to taste
Optional: chili flakes for warmth,
lemon juice for brightness
Instructions
1. Optional sausage browning (provides flavor):
Heat a pan over medium warmth and
gently brown the sausage slices for three–five minutes. This step is
non-compulsory but improves taste and texture.
2. Load the gradual cooker:
Add onion, garlic, carrots,
potatoes, beans, diced tomatoes, and kale into the slow cooker. Place the
browned (or raw) sausage on top.
3. Season and upload liquid:
Pour in broth until everything is
just protected. Add smoked paprika, thyme, bay leaf, salt, and pepper. Stir
gently to combine.
4. Slow cook dinner:
Cook on LOW for 7–8 hours or
Cook on HIGH for four to five hours.
The stew is prepared when the
potatoes and carrots are soft and the kale is gentle.
5. Final modifications:
Remove the bay leaf. Taste and alter
salt and pepper. Add chili flakes for spice or a dash of lemon juice for
freshness.
Serving Suggestions
Serve hot in bowls with crusty
bread, rice, or even over mashed potatoes. A drizzle of olive oil or a sprinkle
of grated cheese on a pinacle can add greater richness.

Vegetable-heavy model: Add zucchini,
spinach, or bell peppers for extra vegetables.
Creamy version: Stir in a dash of
cream or coconut milk on top.
Extra protein: Add lentils in
