Brothy Tomato Rice
Soup
This Brothy Tomato Rice Soup is a mild, comforting, and
nourishing dish. It combines the tangy sweetness of tomatoes with a mild,

Ingredients (Serves
2–three)
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup cooked rice (white, brown, or jasmine)
2 cups vegetable broth (or hen broth)
1 cup canned crushed tomatoes (or clean mixed tomatoes)
half of tsp dried basil (or 1 tsp clean, chopped)
1/2 tsp dried oregano

Instructions
1. Sauté the
aromatics
