1 tablespoon olive oil or butter
1 medium onion, finely chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
¾ cup wild rice, rinsed
6 cups chicken broth or stock
2 cups cooked chicken, shredded or diced
1 teaspoon dried thyme (or blended herbs)
1 bay leaf (non-obligatory)
Salt and black pepper, to flavor
Optional creamy
addition:
2 tablespoons butter
2 tablespoons all-reason flour
1 cup milk or light cream
Instructions
1. Sauté the
vegetables
Heat the olive oil or butter in a large pot over medium
warmness. Add the onion, carrots, and celery. Cook for about 5–6 minutes,
stirring sometimes, till the vegetables melt. Add the garlic and cook for every
other 30 seconds till fragrant.
2. Add rice and broth
Stir within the wild rice, fowl broth, thyme, and bay leaf.
Bring the soup to a mild boil, then lessen the heat to low. Cover and simmer
for 40–45 minutes, or until the wild rice is gentle and has began to split
open.
3. Add the bird
Stir in the cooked bird and let the soup simmer for some
other 5 mins so the whole thing warms through.
4. Make it creamy
(optional)
