Classic Tomato Soup (Lightened Up!)
This lighter version of classic tomato soup provides all of
the comfortable, familiar taste you like—without heavy cream or more energy.
Naturally sweet carrots replace introduced sugar, at the same time as a small
splash of low-fats or plant milk adds gentle creaminess. It’s easy, nourishing,
and best for a quick lunch or comforting dinner.

Ingredients
1 tablespoon olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 medium carrot, diced (provides herbal sweetness)
1 can (four hundred g) beaten tomatoes or four–5 ripe
sparkling tomatoes, combined
2 cups low-sodium vegetable broth
½ teaspoon dried basil or oregano
Salt and black pepper, to taste
Pinch of chili flakes (non-compulsory)
¼ cup low-fat milk or unsweetened almond milk
(non-obligatory)
Fresh basil or parsley, for garnish
Instructions
1. Heat olive oil in a medium pot over medium warmth. Add
the onion and carrot and sauté for five–6 mins till tender and fragrant.
2. Add garlic and prepare dinner for approximately 30
seconds, stirring continuously.
3. Pour within the tomatoes and vegetable broth. Add dried
herbs, salt, pepper, and chili flakes if using.
4. Bring to a mild simmer. Reduce heat and cook dinner
exposed for 15–20 mins, allowing flavors to develop.
6. Return soup to the pot and stir in milk if favored for
light creaminess. Warm gently and modify seasoning.
7. Ladle into bowls and garnish with fresh herbs earlier
than serving.

Variations
Roasted tomato option: For deeper taste, roast clean
tomatoes at 200°C (400°F) for approximately 20 mins before mixing.
Protein improve: Add 2 tablespoons crimson lentils even as
simmering; they cook quick and obviously thicken the soup.
Vegan version: Use almond, oat, or soy milk—or bypass milk
altogether.
Extra flavor: A small splash of balsamic vinegar or lemon
juice brightens the soup superbly.
Serving Suggestions
Pair with whole-grain toast, a light grilled cheese
sandwich, or a fresh inexperienced salad. For more texture, sprinkle with
selfmade croutons or toasted pumpkin seeds.
