Creamy Chicken Stew
A rich, comforting, and hearty stew perfect for relaxed
dinners. Tender fowl, gentle greens, and a creamy sauce make this dish
irresistible.
Ingredients (Serves
4–6)
500 g boneless hen thighs or breast, cut into bite-sized
pieces
2 tbsp olive oil or butter
1 medium onion, finely chopped
2 cloves garlic, minced
2 medium carrots, sliced
2 celery stalks, sliced
2 hundred g potatoes, diced
a hundred and fifty g mushrooms, sliced (non-compulsory)
2 cups chook broth
1 cup heavy cream or half of-and-half
2 tsp clean thyme or 1 tsp dried thyme
1 bay leaf
Salt and pepper, to flavor
2 tbsp all-motive flour (non-compulsory, for thickening)
Fresh parsley, chopped, for garnish
Instructions
1. Sear the Chicken
Heat olive oil or butter in a huge pot over medium-high
heat. Season bird with salt and pepper and sear until lightly browned, about
