Ingredients

1 tablespoon olive oil or butter

1 medium onion, finely chopped

2 cloves garlic, minced

1 small carrot, diced

1 celery stalk, diced (optional)

1 small potato, peeled and diced (optional, for additonal creaminess)

three cups vegetable broth

½ teaspoon floor cumin

½ teaspoon smoked paprika (optional)

Salt and black pepper, to flavor

½ cup cream or coconut milk (use coconut milk for vegan)

1–2 teaspoons lemon juice (non-obligatory)

For garnish (non-obligatory):

Fresh parsley or cilantro, chili flakes, cracked pepper, croutons, or toasted bread.

1. Heat the olive oil or butter in a medium pot over medium warmness. Add the chopped onion and cook dinner for about 4–5 minutes till smooth and translucent.
