Creamy Yayla Çorbası
(Turkish Yogurt Soup)
Ingredients (Serves
four–6):
1 cup rice (short-grain works quality)
4 cups water or vegetable broth
1 cup simple yogurt (full-fats or Greek yogurt for added
creaminess)
1 massive egg
2 tablespoons all-cause flour
2 tablespoons butter or olive oil
1 teaspoon dried mint
1 teaspoon paprika (optional, for coloration and taste)
Salt, to taste
Instructions
1. Cook the Rice:
In a medium saucepan, bring four cups of water or vegetable
broth to a boil. Add the rice, decrease the warmth, cover, and permit it simmer
until soft (around 15–20 minutes). The rice have to be tender and slightly
thickened but no longer delicate.
2. Prepare the Yogurt
Mixture:
While the rice chefs, whisk together the yogurt, egg, and
flour in a bowl until smooth. To prevent curdling, temper this combination by
means of slowly adding a few spoonfuls of the recent rice water even as
whisking continuously. This guarantees the yogurt blends easily into the soup.

Creaminess and Flavor
Rice Texture: Short-grain rice creates a thicker, creamier
soup, whilst lengthy-grain rice keeps it slightly lighter.
Additions: Chickpeas, finely chopped spinach, or shredded
carrots may be added for extra vitamins and texture.
Herb Variations: Fresh mint or parsley may be sprinkled on
top for added aroma and colour.
Consistency: Adjust thickness by including a bit extra water
or broth if the soup is just too thick.
