Falafel Salad with Lemon-Tahini Dressing

 

 Ingredients

For the Salad:

1 cup cooked chickpeas (or canned, drained)

1 small purple onion, finely chopped

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 cup fresh parsley, chopped

1/four cup clean mint, chopped

four–6 falafel (shop-sold or home made)

Mixed vegetables: lettuce, spinach, arugula, or any aggregate

Optional: 1/4 cup crumbled feta cheese

For the Lemon-Tahini Dressing:

three tbsp tahini

2 tbsp olive oil

Juice of 1 lemon

1 garlic clove, minced

2–three tbsp water (modify for preferred consistency)

Salt and pepper to taste

Instructions

1. Prepare the Falafel:

Store-bought: Heat according to package deal instructions.

Homemade: Mash chickpeas and combine with minced garlic, finely chopped onion, parsley, cumin, coriander, salt, and pepper. Add 1–2 tbsp flour to bind. Form into small balls and pan-fry or bake at 2 hundred°C (four hundred°F) until golden and crisp, about 15–20 mins.

2. Make the Lemon-Tahini Dressing:

 Slowly add water, one tablespoon at a time, till the dressing is clean and pourable. Adjust salt and lemon juice to flavor.

Three. Assemble the Salad:

In a huge salad bowl, combine blended veggies, cherry tomatoes, cucumber, pink onion, parsley, mint, and cooked chickpeas.

Add the nice and cozy falafel on top.

Drizzle generously with the lemon-tahini dressing.

Sprinkle crumbled feta on top if favored.

4. Serve:

Serve straight away for the great flavor, at the same time as the falafel is heat and the veggies are fresh.
