Greens-and-Cheese-Stuffed Cinderella Pumpkin

 

A Cinderella pumpkin, also known as Rouge Vif d’Etampes, is ideal for stuffing due to its certainly sweet, tender flesh and deep orange coloration. This dish is hearty, festive, and filled with nutrients from leafy greens and creamy cheese.

Ingredients (Serves 4–6)

For the pumpkin:

1 small to medium Cinderella pumpkin

Olive oil

Salt and black pepper

For the filling:

2 tbsp olive oil or butter

1 onion, finely chopped

2–3 garlic cloves, minced

three cups blended veggies (spinach, kale, Swiss chard)

1 cup ricotta or cottage cheese

½ cup feta or grated Parmesan

½ tsp nutmeg (elective)

½ cup breadcrumbs (optional)

Salt and black pepper to taste

Instructions

1. Prepare the pumpkin:

Preheat oven to 375°F (190°C). Cut the pumpkin pinnacle off and scoop out seeds and fibers. Brush the interior gently with olive oil, and season with salt and pepper. Save seeds for roasting if favored.

2. Cook the veggies:

Heat olive oil in a pan over medium warmth. Sauté onion until soft and translucent, then add garlic for a minute. Add the veggies and prepare dinner till wilted. Season with salt, pepper, and a pinch of nutmeg. Allow to chill slightly.

3. Prepare the filling:

In a bowl, combine the cooked veggies with ricotta and feta or Parmesan. Mix in breadcrumbs in case you want a barely crunchy texture. Adjust seasoning to taste.

4. Stuff the pumpkin:

Spoon the filling into the pumpkin cavity, packing gently. Replace the pumpkin top if desired, or go away open for a country appearance.

5. Bake the pumpkin:

Place the crammed pumpkin in a baking dish. Add a dash of water to the lowest to save you burning.  Bake for 45–60 mins, until the pumpkin flesh is gentle while pierced with a fork.

6. Serve:

Cut into wedges or serve as an entire centerpiece. Optional: drizzle with olive oil or sprinkle greater cheese before serving.

Tips and Variations

Add cooked quinoa, rice, or lentils for extra protein.

Try unique cheeses like goat cheese, fontina, or smoked mozzarella for richer flavor.

Roast pumpkin seeds with spices or cinnamon sugar for a crunchy snack.

For a festive contact, sprinkle sparkling herbs like thyme, parsley, or sage over the pumpkin earlier than serving.
