Soba Noodles with Peanut Dressing

 

A easy, flavorful dish combining nutty peanut dressing with soft soba noodles and sparkling vegetables. Perfect as a light meal, lunch, or side.

Ingredients (Serves 2-three)

Noodles & Vegetables

200 g soba noodles

1 small cucumber, julienned

1 medium carrot, julienned

1 purple bell pepper, thinly sliced

2-3 green onions, chopped

Optional: fresh cilantro or basil

Peanut Dressing

three tbsp peanut butter

2 tbsp soy sauce or tamari

1 tbsp rice vinegar or lime juice

1 tbsp honey or maple syrup

1 tsp sesame oil

1 tsp grated ginger

1 small garlic clove, minced

2–3 tbsp heat water to thin

Optional: chili flakes or sriracha

Garnish

Sesame seeds

Chopped peanuts

Instructions

1. Cook the soba noodles

Boil noodles in keeping with package guidelines (four–6 minutes). Drain and rinse below bloodless water. Set aside.

2. Prepare the peanut dressing

Whisk peanut butter, soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic. Gradually upload warm water till easy and pourable. Adjust seasoning to flavor. Add chili or sriracha for spice.

 3. Toss noodles and veggies

In a large bowl, integrate noodles, cucumber, carrot, bell pepper, and green onions. Pour over peanut dressing and mix till frivolously covered.

4. Garnish and serve

Sprinkle sesame seeds and chopped peanuts on top. Serve without delay or relax 30 minutes for a clean salad.

Tips & Variations

Add protein: tofu, edamame, shredded chook.

Make in advance: dressing may be stored in refrigerator for as much as a week.

Warm model: stir-fry noodles and greens in brief, then toss with peanut dressing.

This dish is short, healthy, and versatile, balancing creamy peanut taste with crisp vegetables.
