Cheesy Veggie Pasta Recipe

 

This Cheesy Veggie Pasta is a creamy, comforting dish packed with colorful veggies and gooey cheese. It’s ideal for a fast lunch or dinner and can be customized together with your favorite veggies.

Ingredients (Serves 2–three)

200g pasta (penne, fusilli, or macaroni)

1 cup broccoli florets

1 medium carrot, thinly sliced

1 small bell pepper, diced

½ cup sweet corn

2 cloves garlic, minced

2 tbsp olive oil or butter

½ cup grated cheddar cheese

¼ cup grated parmesan (elective)

½ cup milk (or cream for extra richness)

Salt and black pepper, to flavor

½ tsp chili flakes (elective)

Fresh parsley or basil for garnish

Instructions

1. Cook the Pasta

Bring a massive pot of salted water to a boil. Add pasta and prepare dinner till al dente consistent with package commands. Drain, booking ¼ cup of pasta water, and set apart.

2. Sauté the Vegetables

In a huge pan, heat olive oil or butter over medium warmth. Add garlic and sauté for 30 seconds till aromatic. Add carrots, bell peppers, broccoli, and corn. Cook for 5–7 mins, stirring now and again, till the veggies are tender but nonetheless barely crisp.

Three. Make the Cheese Sauce

Lower the warmth and pour within the milk. Gradually upload cheddar cheese, stirring constantly until melted and smooth. If the sauce is too thick, add a splash of reserved pasta water to loosen it. Season with salt, pepper, and chili flakes if you want a mild warmth.

Four. Combine Pasta and Sauce

Add the cooked pasta to the pan with veggies and toss till well lined inside the cheesy sauce. Sprinkle parmesan cheese on pinnacle for extra taste if desired.

 Five. Serve and Garnish

Transfer to plates or a serving bowl. Garnish with chopped clean parsley or basil. Serve hot with more cheese on the side if you like it more cheesy.

Veggie swaps: Zucchini, spinach, mushrooms, or peas work nicely.

Creamier sauce: Add a bit cream or cream cheese for a richer texture.
