Ingredients (Serves 4–6)

For the ribs:

1.     Five–2 kg red meat us of a-fashion ribs

1½ tsp salt

1 tsp black pepper

1 tsp paprika

1 tsp garlic powder

2 tbsp oil (vegetable or olive oil)

For the sauce:

1 huge onion, sliced

four cloves of garlic, minced

2 medium carrots, chopped

2 medium potatoes, peeled and cut into chunks (non-obligatory but advocated)

1 cup tomato sauce or overripe tomatoes

2 tbsp soy sauce

1 tbsp Worcestershire sauce (optionally available)

1 tsp sugar (balances acidity)

2 cups pork or chicken broth

1 tsp dried thyme or oregano

1–2 bay leaves

Instructions

1. Season and brown the ribs.

Pat the ribs dry and season them with salt, pepper, paprika, and garlic powder. Heat oil in a large pot or deep pan over medium-high heat. Brown the ribs on all facets for about 2–3 mins. side by side. This step builds taste, so don’t pass it. Remove and set aside.

2. Cook the aromatics.

In the same pot, lessen heat to medium. Add onions and cook until softened, about three–4 mins. Add garlic and stir for some other 30 seconds until fragrant.

Three. Build the sauce.

Add tomato sauce, soy sauce, Worcestershire sauce, sugar, thyme, and bay leaves. Stir properly and let it simmer for 2–three minutes. Pour in broth and blend until blended.

Four. Add veggies and ribs.

Place carrots and potatoes into the pot. Return the browned ribs, ensuring they're in part submerged in the liquid. Bring everything to a mild boil.

Five. Slow cook

Reduce warmth to low, cover, and simmer for 1.5 to 2.5 hours. Stir every so often. The ribs are ready while they're very tender and nearly falling apart. If using an oven, you could also cook dinner covered at 160°C (320°F) for a similar time.

6. Final modifications

Remove bay leaves. Taste the sauce and regulate seasoning with salt or pepper if needed. If the sauce is too skinny, simmer uncovered for 10–15 mins to thicken it.
