Instructions
1. Preheat oven to 180°C (350°F).
Grease and line a cake pan.
2. Cream butter and sugar: In a
separate bowl, beat the butter and sugar until light and fluffy. This step
gives the cake its gentle texture.
3. Add eggs and flavoring: Mix in
eggs separately. Add orange zest and vanilla extract.
4. Combine moist components: Stir
orange juice and yogurt (or milk) into the combination.
5. Mix batter: Gradually add dry
substances into wet aggregates. Stir lightly until simply combined. Do not
overmix.
6. Fold in cranberries: Lightly coat
cranberries with a piece of flour (to prevent sinking), then fold them into the
batter.
7. Bake: Pour batter into an
organized pan and bake for 35–45 mins, or till a toothpick inserted inside the
center comes out easy.
8. Cool: Let cake cool for 10–15
mins before doing away with it from the pan.
9. Optional glaze: Mix powdered
sugar and orange juice, then drizzle over cooled cake.

cranberry jewels scattered inside. The crumb is gentle and moist because of
orange juice and yogurt. When sliced, you get lovely bursts of tart cranberry
