This Creamy White Bean Lemon Pesto
Orzo Soup is a comforting, vivid, and protein-rich vegetarian soup that

homemade basil pesto)
Juice of one lemon
Zest of 1/2 lemon
Handful of spinach or kale
(non-obligatory)
Instructions
1. Build the taste base.
Heat olive oil in a huge pot over
medium warmth. Add onion, carrots, and celery. Cook for 5–7 mins till softened.
Add garlic, oregano, salt, and pepper. Stir for 1 minute till fragrant.
2. Add beans and broth.
Stir within the white beans and
vegetable broth. Bring to a mild boil, then lessen warmth and simmer for about
10 mins so the flavors integrate.
3. Cook the orzo.
Add orzo without delay into the
soup. Cook for eight–10 minutes, stirring from time to time to save you
sticking, until the pasta is soft.
4. Make it creamy.
Lightly mash some of the beans with
the back of a spoon in the pot. This naturally thickens the soup. Add milk (if
using) for extra creaminess.

Stir in spinach or kale and prepare
