Honey-Ricotta Mousse with Strawberries

Ingredients (Serves four)

For the mousse:

 1 cup (250 g) ricotta cheese, nicely-tired

1/four cup (60 ml) heavy cream

3 tablespoons honey (plus extra for drizzling)

1 teaspoon natural vanilla extract

Zest of 1 lemon (optionally available, for brightness)

Pinch of salt

For the strawberries:

1 cup clean strawberries, hulled and sliced

1 teaspoon honey or sugar

1 teaspoon lemon juice

Optional garnish:

Fresh mint leaves

Crushed pistachios or toasted almonds

Instructions

1. Prepare the strawberries

In a small bowl, combine sliced strawberries with honey (or sugar) and lemon juice.

Toss gently and set aside for 10–15 mins to macerate. This will launch their herbal juices and enhance sweetness.

2. Make the mousse

In a medium bowl, whisk the ricotta cheese till clean and creamy. You can use a hand whisk or a food processor for added silkiness.

In a separate bowl, gently whip the heavy cream till soft peaks form.

Gently fold the whipped cream into the ricotta at the side of honey, vanilla, lemon zest (if the use of), and a pinch of salt. Mix carefully to preserve the mousse airy.

3. Assemble the dessert

Top with the macerated strawberries, allowing some of the juices to drizzle over the mousse.

Optionally, drizzle greater honey on top and sprinkle with beaten pistachios or almonds for a crunchy evaluation.

Garnish with clean mint leaves.

Four. Chill and serve

Refrigerate for as a minimum 30 minutes to permit the flavors meld.

Serve cold for a fresh, creamy dessert.

Tips

Ricotta texture: If your ricotta is just too grainy, pressure it via a pleasant-mesh sieve or combo it for a smoother mousse.

Sweetness adjustment: Taste the mousse before folding inside the whipped cream; add greater honey in case you decide upon it sweeter.

Variations: Swap strawberries for raspberries, blueberries, or a combination of summer berries. A touch of orange zest also pairs fantastically with honey.

This dessert is mild, evidently sweetened, and elegant, making it perfect for a summer time deal with or a easy night meal finale. The ricotta provides a creamy, rich texture, at the same time as honey and fresh strawberries upload brightness and natural sweetness.
