Ingredients (Serves
four)
For the mousse:
1/four cup (60 ml) heavy cream
3 tablespoons honey (plus extra for drizzling)
1 teaspoon natural vanilla extract
Zest of 1 lemon (optionally available, for brightness)
Pinch of salt
For the strawberries:
1 cup clean strawberries, hulled and sliced
1 teaspoon honey or sugar
1 teaspoon lemon juice
Optional garnish:
Fresh mint leaves
Crushed pistachios or toasted almonds
Instructions
1. Prepare the
strawberries
In a small bowl, combine sliced strawberries with honey (or
sugar) and lemon juice.
Toss gently and set aside for 10–15 mins to macerate. This
will launch their herbal juices and enhance sweetness.
2. Make the mousse
In a medium bowl, whisk the ricotta cheese till clean and
creamy. You can use a hand whisk or a food processor for added silkiness.
In a separate bowl, gently whip the heavy cream till soft
peaks form.
Gently fold the whipped cream into the ricotta at the side
of honey, vanilla, lemon zest (if the use of), and a pinch of salt. Mix
carefully to preserve the mousse airy.
3. Assemble the
dessert
Top with the macerated strawberries, allowing some of the
juices to drizzle over the mousse.
