Instant-Pot Mujadara (Vegetarian)
Mujadara is a traditional Middle
Eastern dish crafted from lentils, rice, and deeply caramelized onions. It is
known for its wealthy, savory taste, notwithstanding using very simple

Step-by-Step Instructions
Step 1: Caramelize the onions (the most essential step)
Turn the Instant Pot to Sauté mode.
Add olive oil and sliced onions with a small pinch of salt.
Cook the onions slowly for 20–30
minutes, stirring frequently. At first they'll soften and turn translucent,
then steadily become golden brown, and in the end, turn deep brown and barely
crispy.
This stage builds the signature
flavor of Mujadara, so do not rush it now. If onions start sticking an
excessive amount, add a touch of water and hold cooking.
Once fully caramelized, remove about
half of the onions and set aside for topping later. Leave the last onions
inside the pot.
Step 2: Add spices and lentils.
With the last onions, nevertheless,
within the pot, add minced garlic (if using), cumin, coriander, turmeric, black
pepper, and bay leaf.
Stir for approximately 30–60 seconds
till the spices turn out to be aromatic. This step blooms the spices and

Add rinsed lentils and stir nicely

natural lunch for 10 minutes, then fluff lightly with a fork.
The rice needs to be tender, fluffy,
and infused with lentil and onion flavor.
Step five: Final assembly
Transfer Mujadara to a serving dish.
Top generously with the reserved
caramelized onions. This topping is essential—it offers sweetness, crunch, and
deep flavor contrast.
Add chopped parsley for freshness
and a squeeze of lemon if desired.
Serve warm.
