Lemon-Blueberry Bars

Lemon-Blueberry Bars

Lemon-blueberry bars are a vibrant, fresh dessert that completely balances sweet and tangy flavors. With a buttery crust, a smooth lemon filling, and bursts of juicy blueberries, these bars are a delightful deal for spring and summer season gatherings. They combine the zesty freshness of lemon with the herbal sweetness of blueberries, creating a dessert that is both colorful and satisfying.

These bars are similar to traditional lemon bars but with an added fruity twist. The blueberries add coloration, taste, and a slight tartness that complements the lemon fantastically. The texture is also attractive—crisp on the outside, smooth and creamy inside the middle, and slightly juicy, in which the berries burst throughout baking. Lemon-blueberry bars are best for picnics, brunch tables, afternoon snacks, or light desserts after dinner.

Ingredients

For the crust:

1 cup all-purpose flour

half cup unsalted butter, softened

1/4 cup powdered sugar

¼ teaspoon salt

For the filling:

2 big eggs

3/4 cup granulated sugar

2 tablespoons all-purpose flour

1/3 cup freshly squeezed lemon juice

1 teaspoon lemon zest

1 cup fresh blueberries

Optional topping:

Powdered sugar for dusting

Instructions

1. Prepare the pan and oven.

Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or gently grease it to save you sticking.

2. Make the crust

In a mixing bowl, integrate the flour, powdered sugar, and salt. Add the softened butter and blend till the elements shape a crumbly dough. Press the mixture flippantly into the lowest of the prepared pan.

3. Bake the crust.

Place the pan in the preheated oven and bake the crust for about 15–18 mins, or till it becomes gently golden. Remove it from the oven and let it cool barely even as you put together the filling.

4. Prepare the lemon filling.

In every other bowl, whisk collectively the eggs and granulated sugar until smooth. Add the flour, lemon juice, and lemon zest, and mix till completely mixed. The mixture has to be clean and barely thick.

5. Add the blueberries.

Gently fold the sparkling blueberries into the lemon combination. Try now not to crush them so they continue to be whole and juicy in the course of baking.

6. Pour and bake

Pour the lemon-blueberry filling over the warm crust. Spread it flippantly so the blueberries are distributed in the course. Return the pan to the oven and bake for 20–25 minutes, or till the filling is set and no longer jiggles in the middle.

7. Cool, absolutely.

Allow the bars to cool at room temperature, then arrange them in the fridge for approximately an hour. Chilling allows the filling to crystallize and makes the bars less difficult to cut.

8. Slice and serve

Once chilled, lift the bars out of the pan using the parchment paper. Cut into squares or rectangles and gently dust with powdered sugar before serving.

Tips for Best Results

Using clean lemon juice offers the pleasant flavor, but bottled lemon juice can contain preservatives if needed. Fresh blueberries are best because they hold their shape better, even though frozen blueberries can be used if thawed and drained first. For extra lemon taste, you can add a bit more zest.
