Meatballs with Lemon-Garlic Orzo
A vibrant, comforting dish that
balances juicy, savory meatballs with zesty, buttery orzo pasta. The lemon and
garlic lift the whole meal, making it experience clean at the same time as
still being hearty.
Ingredients
For the meatballs:
500 g ground pork (or chook/lamb
mix)
1 small onion, finely grated
3 garlic cloves, minced
1 egg
half cup breadcrumbs
2 tbsp chopped parsley (or
coriander)
1 tsp salt
half a tsp black pepper
half tsp paprika (optionally
available)
1 tbsp olive oil (for frying)
For the lemon-garlic orzo:
1.5 cups orzo pasta
3 tbsp butter (or olive oil)
four garlic cloves, minced
3 cups chicken or vegetable broth
Juice of 1 lemon
Zest of 1 lemon
¼ cup grated Parmesan (optionally
available)
Salt and pepper to flavor
Fresh parsley for garnish
Instructions
1. Prepare the meatballs.
In a big bowl, blend ground meat,
grated onion, garlic, egg, breadcrumbs, parsley, salt, pepper, and paprika. Mix
lightly—don’t overwork or the meatballs turns into dense.
Shape into small balls (about 1.5
inches wide).
Heat olive oil in a pan over medium
warmth. Brown the meatballs on all facets for approximately 6–8 minutes. They
don’t need to be fully cooked internally yet. Remove and set apart.
2. Cook the orzo.
In the identical pan or a pot,
soften butter over medium heat. Add garlic and sauté for 30–60 seconds till
aromatic.
Add orzo and stir for 1–2 minutes so
it gently toasts.
Pour in broth and convey it to a
mild simmer. Stir on occasion to save yourself sticking.
Cook for approximately eight–10 mins
until orzo is smooth and most liquid is absorbed.
3. Combine and end
Return the meatballs to the pot with
the orzo. Cover and simmer for some other 8–10 minutes, permitting the
meatballs to cook through and take in taste.
Once performed, stir in lemon juice,
lemon zest, and Parmesan (if using). Taste and regulate salt and pepper.
Serving
Serve hot, garnished with clean
parsley and an additional sprinkle of lemon zest. A light salad or steamed
veggies pair perfectly in this aspect.
Tips
For greater flavor, upload a pinch
of chili flakes to the garlic butter.
You can bake meatballs in preference
to frying for a lighter model.
Add spinach or peas to the orzo for
additional greens.
For a creamier texture, stir in a
splash of cream at the given up
