Meatballs with Lemon-Garlic Orzo

Ingredients

For the meatballs:

500 g ground pork (or chook/lamb mix)

1 small onion, finely grated

3 garlic cloves, minced

1 egg

half cup breadcrumbs

2 tbsp chopped parsley (or coriander)

half a tsp black pepper

half tsp paprika (optionally available)

1 tbsp olive oil (for frying)

For the lemon-garlic orzo:

1.5 cups orzo pasta

3 tbsp butter (or olive oil)

four garlic cloves, minced

3 cups chicken or vegetable broth

Juice of 1 lemon

Zest of 1 lemon

¼ cup grated Parmesan (optionally available)

Salt and pepper to flavor

Fresh parsley for garnish

Instructions

1. Prepare the meatballs.

In a big bowl, blend ground meat, grated onion, garlic, egg, breadcrumbs, parsley, salt, pepper, and paprika. Mix lightly—don’t overwork or the meatballs turns into dense.

Shape into small balls (about 1.5 inches wide).

Heat olive oil in a pan over medium warmth. Brown the meatballs on all facets for approximately 6–8 minutes. They don’t need to be fully cooked internally yet. Remove and set apart.

2. Cook the orzo.

In the identical pan or a pot, soften butter over medium heat. Add garlic and sauté for 30–60 seconds till aromatic.
