Slow-Cooker Chicken, Spinach & White Bean Stew (≤600 words)

This slow-cooker stew is a hearty, high-protein, vegetable-wealthy meal made with gentle chook, creamy white beans, and nutrient-packed spinach. It’s easy to put together, chefs gently over numerous hours, and develops deep, comforting flavors.

Ingredients

500–700 g chicken (boneless thighs or breasts)

three–four cups fresh spinach

1 medium onion, chopped

3–4 cloves garlic, minced

2 medium carrots, sliced

1 can (four hundred g) diced tomatoes

3–4 cups chicken broth or vegetable broth

1–2 tablespoons olive oil

Instructions

1. Prep the base

Heat olive oil in a pan (non-obligatory; however, it complements flavor). Lightly sauté onion, garlic, carrots, and celery for 3–five mins till fragrant. This step deepens the stew’s taste but can be skipped for a true “sell-off and cross” approach.

2. Load the slow cooker.

Add chicken, sautéed greens (or raw if skipping sauté), white beans, diced tomatoes, broth, thyme, oregano, bay leaf, salt, and pepper into the slow cooker. Stir gently to mix.

3. Slow cook

Cook on LOW for six–eight hours or

Cook on HIGH for 3–4 hours.

The chicken needs to come to be tender and smooth to shred.

4. Shred the chicken.

Remove the hen, shred it with two forks, then return it to the pot. Stir well so it absorbs the broth and seasonings.
