Sweet ‘n’ Spicy Chicken is a flavorful dish that completely balances two contrasting tastes—sweetness and warmth. It is popular in many Asian-inspired cuisines and is often served with steamed rice, noodles, or stir-fried vegetables. Ingredients (Serves three–four)

For the hen:

500g boneless chook (reduce into chew-sized portions)

2 tbsp soy sauce

1 egg (optional, for coating)

3 tbsp corn flour (cornstarch)

2 tbsp all-purpose flour

For the candy and highly spiced sauce:

3 tbsp ketchup

2 tbsp chili sauce (adjust to taste)

2 tbsp honey or brown sugar

1 tbsp soy sauce

1 tsp ginger (grated)

1–2 inexperienced chilies (sliced; optionally available for additional heat)

½ cup water or fowl stock

Preparation Steps

1. Marinate the hen.

In a bowl, blend fowl portions with soy sauce, salt, pepper, and egg (if using). Add corn flour and flour, coating the chook evenly. Let it relax for 15–20 mins. This allows the creation of a crispy outer layer while frying.

2. Fry the chicken.

Heat oil in a pan or deep fryer. Fry the chicken portions in batches until golden brown and cooked through. Remove and drain on paper towels. For a lighter model, you can air-fry or shallow fry instead.

Three. Prepare the sauce.

In a separate pan, warm a small quantity of oil. Add garlic, ginger, and green chilies. Sauté till fragrant. Then add ketchup, chili sauce, honey, soy sauce, vinegar, and water. Stir well and convey to a mild simmer.

Four. Thicken the sauce.

Add the cornflour slurry at the same time as stirring constantly. The sauce will begin to thicken and turn smooth. Adjust sweetness or spiciness depending on your desire.

Add the fried bird into the sauce and toss until every piece is fully covered. If using greens, add them at this stage and prepare dinner for 2–3 mins until barely soft, but nonetheless crisp.
