Ingredients (1
serving)
2–three large eggs
1–2 tablespoons Boursin cheese (garlic & herb taste
works excellent)
1–2 slices bacon, cooked until crispy and chopped
A handful of clean spinach, roughly chopped
Salt and black pepper, to taste
Butter or olive oil, for cooking
Optional: clean herbs like chives or parsley for garnish
Instructions
1. Cook the bacon and
spinach
Heat a small skillet over medium heat.
Fry the bacon until crispy, then cast off it and drain on
paper towels. Chop into chew-sized portions.
Using the equal skillet, sauté the spinach for 1–2 minutes
till wilted. This absorbs the bacon taste while maintaining the spinach tender.
Set apart with the bacon.
2. Prepare the eggs
Crack the eggs right into a bowl.
Add a pinch of salt and black pepper, then whisk till the
yolks and whites are absolutely blended and barely frothy. Whisking properly
ensures smooth, fluffy scrambled eggs.
Three. Cook the
scrambled eggs
In the skillet, soften a small pat of butter or a teaspoon
of olive oil over medium-low heat.
Pour inside the whisked eggs. Let them take a seat
undisturbed for a few seconds until the edges begin to set.
Gently stir with a spatula, folding the eggs from the rims
towards the center. Cook slowly to keep a creamy texture.
When the eggs are just slightly set however still soft, fold
inside the Boursin cheese, chopped bacon, and sautéed spinach. The cheese melts
into the eggs, growing a rich, garlicky taste.
4. Assemble in a jar
Carefully switch the creamy scrambled eggs into a smooth,
heatproof jar.
Optional: top with extra Boursin, a sprinkle of chopped
chives or parsley, and a pinch of black pepper for presentation.
5. Serve or save
If storing, seal the jar with a lid and refrigerate for up
to two days. Reheat lightly in a microwave (approximately 30–60 seconds) or in
a skillet over low warmth to save you overcooking.
