Lemon-Tahini Couscous
with Chicken & Vegetables
A vibrant, wholesome, and pleasurable
Mediterranean-stimulated dish, combining soft chook, colourful greens, fluffy
couscous, and a creamy lemon-tahini dressing. Ready in approximately 30
minutes, it’s best for a fast weeknight dinner or meal prep.
Ingredients (Serves
2–three)
Chicken &
Vegetables:
2 chook breasts, cut into chunk-sized portions
1 small zucchini, sliced into half-moons
1 purple bell pepper, diced
1 carrot, thinly sliced
1 small purple onion, sliced
2 cloves garlic, minced
2 tbsp olive oil
1 tsp paprika
½ tsp cumin
Salt and pepper to taste
Couscous:
1 cup couscous
1 cup vegetable or chicken broth
Zest of 1 lemon
Juice of 1 lemon
2 tbsp tahini
1–2 tbsp olive oil
Salt and pepper to flavor
Optional: chopped fresh parsley or cilantro for garnish
Instructions
1. Prepare the
Couscous:
Bring the broth to a boil. Stir within the couscous, cover,
and get rid of from warmth. Let sit down for five–10 mins until liquid is
absorbed. Fluff with a fork. Stir in 1 tbsp olive oil, lemon zest, 1 tbsp
tahini, and a touch of lemon juice. Season with salt and pepper.
2. Cook the Chicken:
Heat 2 tbsp olive oil in a big skillet over medium-excessive
warmth. Add bird, season with paprika, cumin, salt, and pepper. Cook for five–7
mins, stirring sometimes, till golden and cooked thru. Remove chook and set
apart.
Three. Sauté the
Vegetables:
In the equal skillet, upload onion, carrot, zucchini, and
bell pepper. Sauté 5–6 mins until gentle-crisp. Add garlic in the remaining
minute to save you burning.
Four. Combine &
Finish:
Return chook to the pan with vegetables. Stir gently to mix.
Serve over or mixed into the couscous. Drizzle closing tahini over the
pinnacle. Garnish with chopped parsley or cilantro and a very last squeeze of
lemon juice for freshness.
Tips & Variations
Vegetarian Option: Replace hen with chickpeas or tofu.
Extra Creaminess: Mix an extra tablespoon of tahini with a
touch of heat water to make a thin sauce and drizzle over the dish.
Meal Prep: Store in airtight containers for up to a few days.
Reheat lightly, adding a bit water to hold couscous fluffy.
Spice Variation: Add a pinch of chili flakes or smoked
paprika for a subtle kick.
This dish balances nutty tahini, zesty lemon, and savory
fowl, whilst the veggies add coloration, crunch, and nutrients. Quick,
flexible, and full of flavor, it’s a present day, healthful take on a
