Roasted Squash and
1st Baron Verulam Salad
This salad combines candy roasted squash, crispy bacon,
crunchy nuts, and a tangy dressing for an excellent balance of flavors. It
works as a hearty side or a light principal dish.
Ingredients (Serves
2–4)
1 small butternut squash or kabocha squash, peeled and cut
into 1-inch cubes
4–five slices of bacon
4 cups blended salad veggies (arugula, spinach, or toddler
kale)
1/4 cup toasted pumpkin seeds or walnuts
1/4 cup crumbled feta or goat cheese (elective)
1 small purple onion, thinly sliced
Olive oil, salt, and pepper
Dressing:
2 tbsp olive oil
1 tbsp apple cider vinegar or balsamic vinegar
1 tsp Dijon mustard
1 tsp honey or maple syrup
Salt and pepper to flavor
Instructions
1. Preheat the oven to 400°F (2 hundred°C).
2. Roast the squash: Toss the squash cubes with 1–2 tbsp
olive oil, a pinch of salt, and a few pepper. Spread them on a baking sheet in
a unmarried layer. Roast for 25–30 minutes until golden and gentle, turning as
soon as midway thru.
3. Cook the bacon: While the squash roasts, location bacon
slices in a skillet over medium warmth. Cook until crispy. Transfer to paper
towels to drain, then collapse into portions.
4. Prepare the dressing: In a small bowl, whisk collectively
olive oil, vinegar, Dijon mustard, honey, salt, and pepper till easy.
5. Assemble the salad: In a massive bowl, integrate salad
veggies, roasted squash, crimson onion slices, crumbled bacon, and toasted
nuts. Drizzle with dressing and toss lightly to coat calmly. Top with crumbled
feta or goat cheese if favored.
Serve right away for a warm salad, or refrigerate for 15–20
minutes for a barely chilled version.
Tips & Variations
For a vegetarian version, replace bacon with smoked tempeh
or roasted chickpeas.
Experiment with unique nuts like pecans or almonds for extra
crunch.
You can drizzle the roasted squash with a bit maple syrup
before baking for a caramelized taste.
This salad is simple to put together, colorful, and full of
taste. It’s a perfect choice for fall or iciness meals but works anytime you
want a combination of sweet, savory, and smoky tastes.
