🥣 Sausage & Lentil Soup
The combination of savory sausage, earthy lentils, and
fragrant veggies makes it each comforting and nutritious. You could make it
with traditional meat sausages or a vegetarian alternative, making it adaptable

Ingredients (Serves 4–6)
250–300g sausage (chicken, turkey, or beef), sliced
1 cup dried lentils (crimson or brown), rinsed
1 onion, finely chopped
2 carrots, diced
2 celery stalks, chopped
three garlic cloves, minced
1 can (400g) chopped tomatoes
1.2 liters vegetable or bird broth
1 tsp ground cumin
1 tsp smoked paprika (elective for smoky flavor)
½ tsp black pepper
Salt, to flavor
1 tbsp olive oil
Fresh parsley or coriander, chopped for garnish

1. Prepare the sausage: Heat olive oil in a huge pot over
medium heat. Add the sliced sausage and cook for 3–4 minutes till browned on
all aspects. Remove from the pot and set aside.
2. Cook the vegetables: In the equal pot, upload the onion,
carrots, celery, and garlic. Sauté for five–7 mins until softened and aromatic.
3. Add lentils and spices: Stir in the lentils, cumin,
paprika, black pepper, and salt. Mix properly to coat the lentils with the
spices.
4. Add drinks: Pour in the chopped tomatoes and broth. Cover
and cook for 25–30 minutes, or till the lentils are tender.
5. Return sausage: Add the browned sausage back to the pot
and simmer for another 5–10 mins to mix the flavors.

Vegetarian Option
You can make this soup vegetarian with out dropping flavor:
Replace sausage with plant-based sausages, smoked mushrooms,
or roasted sweet potatoes.
For extra protein, add tofu cubes or chickpeas.
Use vegetable broth to preserve it fully plant-based.

Texture: For a creamier soup, combo half of of the soup with
a hand blender earlier than adding the sausage returned.
