Chile-Chicken Enchilada Casserole
This one-pan casserole is filled with smooth fowl, slight
green chiles, and gooey melted cheese. Using a skillet makes it brief, easy,
and best for weeknight dinners.
Ingredients (serves
four–6)
2 tablespoons olive oil
1 medium onion, diced
2–3 garlic cloves, minced
2 cups cooked fowl, shredded (rotisserie chicken works well)
1 (4 ounces) can diced inexperienced chiles
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and black pepper, to taste
1 cup salsa verde
½ cup hen broth
eight–10 small corn tortillas, reduce into strips or
quarters
1 cup shredded cheese (cheddar, Monterey Jack, or combo)
½ cup bitter cream, for serving (optional)
Fresh cilantro, chopped, for garnish
Instructions
1. Cook the aromatics
Heat olive oil in a huge oven-safe skillet over medium
warmth. Add diced onion and sauté three–four mins till gentle. Add garlic and
prepare dinner 30 seconds till fragrant.
2. Add chicken and
spices
Stir in shredded fowl, green chiles, cumin, chili powder,
salt, and pepper. Cook 2–3 mins to combine and heat via.
3. Add sauce
Pour in salsa verde and hen broth. Stir well and permit
simmer 2–three minutes so the flavors meld.
4. Layer the
casserole
Spread 1/2 of the tortilla portions over the fowl mixture.
Sprinkle half of the cheese flippantly on pinnacle. Repeat with final tortillas
and cheese.
Reduce warmness to low, cowl skillet, and prepare dinner
five–7 minutes until cheese melts and the whole lot is heated thru. For a
golden top, region under the broiler 2–3 mins.
6. Serve
Spoon into bowls, pinnacle with sour cream, and sprinkle
with clean cilantro. Serve heat.
Tips and Variations
Add greens: Corn, black beans, or diced bell peppers
increase nutrients and taste.
Spice it up: Add jalapeños, cayenne, or chipotle powder if
you want greater heat.
Cheese options: Use a combination of cheddar and Monterrey
Jack for a creamy melt.
Tortilla options: Flour tortillas paintings if corn isn’t to
be had.
