Protein:

half cup roasted candy potatoes, diced

Vegetables:

1 cup roasted or grilled corn

1/2 cup red bell pepper, sliced

1/2 cup shredded cabbage or lettuce

1/four cup cherry tomatoes, halved

Sauce:

2–three tbsp BBQ sauce (smoky, highly spiced, or tangy)

Optional: 1 tbsp Greek yogurt or vegan mayo for creaminess

Toppings:

Fresh cilantro or parsley

Sliced green onions

1/four avocado, sliced

Optional: pickled jalapeños or shredded cheese

Instructions

1. Cook the Base: Prepare your quinoa, rice, or farro consistent with package instructions. Roast diced candy potatoes in olive oil, salt, and pepper at four hundred°F (2 hundred°C) for 20–25 mins.

2. Prepare the Protein: Grill or pan-sear chook, red meat, or tofu until absolutely cooked. Toss lightly in BBQ sauce to coat.

3. Roast or Grill Vegetables: Grill bell peppers and corn until barely charred for extra flavor.

4. Assemble the Bowl:

 Start with a layer of grains.

Add protein on pinnacle.

Arrange roasted vegetables across the protein.

5. Add Fresh Veggies: Top with shredded cabbage, cherry tomatoes, and any final raw greens for crunch.

Add elective creamy dressing.  Add pickled jalapeños for a tangy kick.
