Skillet Chicken and Chorizo Paella

Ingredients (Serves 4)

2 tbsp olive oil

1 lb (450 g) chicken thighs, boneless, cut into chew-sized pieces

1 onion, finely chopped

1 red bell pepper, diced

3 cloves garlic, minced

1 half cups paella rice (or quick-grain rice)

1 tsp smoked paprika

half tsp saffron threads (non-compulsory, soak in 2 tbsp heat water)

4 cups chicken broth, warm

1 cup frozen peas

Salt and pepper, to flavor

Lemon wedges, for serving

Fresh parsley, chopped, for garnish

Instructions

1. Brown the chicken:

Heat olive oil in a huge skillet over medium-high heat. Add chook portions and cook dinner until golden on all facets, about 5–7 minutes. Remove and set aside.

2. Cook the chorizo and veggies:
