Winter Kale &
Quinoa Salad with Avocado
A hearty, nutrient-packed salad ideal for cold days. The
aggregate of kale, quinoa, creamy avocado, and seasonal fruits makes this salad
filling, wholesome, and complete of texture.
Ingredients (Serves
2–3)
Salad:
1 cup quinoa (uncooked)
2 cups water or vegetable broth
four cups kale, stems removed, finely chopped
1 ripe avocado, diced
1 small apple or pear, thinly sliced
1/4 cup pomegranate seeds (elective)
1/4 cup roasted nuts (walnuts, pecans, or almonds)
2 tbsp dried cranberries (optionally available)
Salt and pepper, to taste
Dressing:
three tbsp olive oil
1 tsp Dijon mustard
1 tsp maple syrup or honey
Salt and pepper, to taste
Instructions
1. Cook the quinoa:
Rinse quinoa underneath cold water. In a medium pot, combine
quinoa and water (or broth) and bring to a boil. Reduce warmth, cowl, and
simmer for 15 minutes or until fluffy. Let cool slightly.
2. Massage the kale:
Place chopped kale in a huge bowl. Massage the leaves for
2–three mins till soft and darkened. This reduces bitterness and improves
texture.
3. Make the dressing:
Whisk olive oil, vinegar or lemon juice, Dijon mustard,
maple syrup, salt, and pepper in a small bowl until emulsified.
4. Assemble the salad:
Add cooled quinoa to the kale. Pour the dressing over the salad and toss
gently.
Allow the salad to relaxation for 5–10 minutes so flavors
mixture. Serve fresh and experience.
Tips & Variations
Add roasted candy potatoes or chickpeas for additonal
protein and heat.
Sprinkle feta or goat cheese for a creamy twist.
For a citrusy wintry weather vibe, use orange segments in
preference to apple/pear.
Store leftovers within the fridge for 1–2 days; upload
avocado simply before serving to save you browning.
This salad is colorful, nutritious, and perfect as a mild
lunch or side dish. Quinoa provides protein and texture, kale provides vitamins
and minerals, and avocado brings healthy fat and creaminess. Sweet fruits and
crunchy nuts balance the flavors, at the same time as the tangy dressing ties
