Chicken, Brussels Sprouts & Mushroom Salad (Warm, Hearty & Healthy)

It works properly as a light dinner or a nutritious lunch and is especially pleasing in cooler climates.

🥗 Ingredients (Serves 2–3)

2 chook breasts (boneless, skinless)

2 cups Brussels sprouts (trimmed and halved)

1.     Five cups mushrooms (button or cremini, sliced)

2–3 tbsp olive oil

2 cloves garlic (minced)

1 tsp dried thyme or Italian herbs

Salt and black pepper to taste

1 tsp paprika (non-obligatory, for chook)

1 tbsp lemon juice (fresh)

1 tsp mustard (optionally available, for dressing)

1 tsp honey (elective, for balance)

2 cups sparkling salad vegetables (spinach, lettuce, or arugula)

2 tbsp grated Parmesan or feta (non-obligatory)

🍳 Instructions

1. Prepare the hen.

Season the bird breasts with salt, pepper, paprika, and a drizzle of olive oil. Heat a pan over medium warmth and cook the hen for approximately five–7 minutes per facet until golden brown and absolutely cooked. Remove from the pan and permit it to rest for a couple of minutes earlier than reducing.

2. Roast the vegetables.

Preheat your oven to 200°C (400°F). Place Brussels sprouts and mushrooms on a baking tray. Add olive oil, garlic, thyme, salt, and pepper. Toss well so the entirety is covered calmly.

Roast for approximately 20–25 mins, stirring halfway via, until the Brussels sprouts are crispy on the rims and the mushrooms are smooth and barely caramelized.

3. Make the dressing

In a small bowl, mix olive oil, lemon juice, mustard, and honey. Whisk till slightly thickened. Adjust salt and pepper to flavor.

4. Assemble the salad.

In a massive bowl or plate, upload fresh salad vegetables because of the base. Top with roasted Brussels sprouts, mushrooms, and sliced chicken.

Drizzle the dressing lightly over the top. Sprinkle with Parmesan or feta if you use it.

🌿 Serving Tips

Serve warm for the excellent flavor, though it also tastes properly bloodless.

Add toasted nuts like almonds or walnuts for added crunch.

You can replace the bird with tofu or chickpeas for a vegetarian model.

For extra richness, upload avocado slices.
