Swedish Meatball Soup (Svenska
köttbullesoppa)
Swedish Meatball Soup is a
comforting Nordic-fashion dish that mixes juicy, pro meatballs with a creamy,
flavorful broth. It takes the concept from the well-known Swedish meatballs but
turns them into a warm, hearty soup that is best for a bloodless climate or a
filling family meal.
🥣 Ingredients
For the meatballs:
500 g lean red meat (or½ pork + 1/2
red meat)
1 small onion (finely grated or
chopped)
1 garlic clove (elective)
1 egg
three–four tbsp breadcrumbs
2–3 tbsp milk
Salt and black pepper
½ tsp allspice (key Swedish flavor)
For the soup:
1 tbsp butter
1 onion (chopped)
2 carrots (sliced)
2 potatoes (cubed)
1 liter beef or vegetable broth
1 cup milk or cream
1–2 tbsp flour (for thickening,
non-obligatory)
Salt and pepper
Fresh dill or parsley for garnish

Instructions
1. Make the meatballs.
Mix gently (don’t overwork, or the
meatballs will come to be difficult). Shape into small chew-sized balls.
Pan-fry them gently in butter till
browned outdoors. They don’t need to be completely cooked yet, as they may end
up cooking in the soup.
2. Build the soup base.
In a massive pot, soften butter. Add
chopped onion and sauté until soft and barely golden.
Add carrots and potatoes, stirring
for a couple of minutes to release taste.
Simmer for approximately 10–15 mins
till the greens begin to melt.
Three. Add meatballs.
Carefully upload the browned
meatballs into the soup. Simmer for another 10–15 mins till meatballs are fully
cooked and veggies are gentle.
Four. Make it creamy.
Lower the heat and stir in milk or
cream. If you want a thicker soup, blend flour with a bit of water and upload
it slowly at the same time as stirring.
Simmer lightly for 5 more minutes.
Adjust salt and pepper.
🌿 Serving
Ladle the soup into bowls and
garnish with clean dill or parsley. Serve with crusty bread or rye bread for a
traditional Nordic touch.
