Mini Meatloaves & Veggies

Mini meatloaves & veggies is a
simple, hearty one-pan meal made in muffin tins or small loafs. It offers you
all the comfy flavor of classic meatloaf but in faster, component-friendly
servings with masses of vegetables on the facet.
Ingredients
For the mini meatloaves:
500g lean red meat or blended red
meat & chicken
1 small onion (finely chopped)
2 cloves garlic (minced)
1 egg
1/2 cup breadcrumbs (or oats for a
more fit option)
2 tbsp milk
2 tbsp ketchup or tomato paste
1 tsp salt
half a tsp black pepper
1 tsp paprika or blended spices
Optional: chopped parsley or
coriander
For the veggies:
Sliced potatoes
Carrots
Broccoli florets
Bell peppers
Olive oil
Salt, pepper, and dried herbs
Preparation Steps
1. Prepare the meat aggregate.
In a big bowl, blend ground meat
with onion, garlic, egg, breadcrumbs, milk, ketchup, and spices. Combine
lightly—overmixing could make the meatloaves dense in place of smooth.
2. Shape mini loaves
Divide the mixture into small
portions and place them in a greased muffin tray or shape them into mini oval
loaves on a baking tray.
3. Prepare the greens.
Chop veggies into even-sized
portions for uniform cooking. Toss them gently with olive oil, salt, pepper,
and herbs.

4. Bake the whole lot collectively.
Preheat the oven to 190°C (375°F).
Place the mini meatloaves on one side of a massive baking tray and the
vegetables on the opposite side (or use trays if wished). Bake for 25–35 mins,
or till the beef is completely cooked and the greens are tender and lightly
roasted.
