Ingredients

For the mini meatloaves:

500g lean red meat or blended red meat & chicken

1 small onion (finely chopped)

2 cloves garlic (minced)

half a tsp black pepper

1 tsp paprika or blended spices

Optional: chopped parsley or coriander

For the veggies:

Sliced potatoes

Carrots

Broccoli florets

Bell peppers

Olive oil

Salt, pepper, and dried herbs

Preparation Steps

1. Prepare the meat aggregate.

In a big bowl, blend ground meat with onion, garlic, egg, breadcrumbs, milk, ketchup, and spices. Combine lightly—overmixing could make the meatloaves dense in place of smooth.

Divide the mixture into small portions and place them in a greased muffin tray or shape them into mini oval loaves on a baking tray.

Chop veggies into even-sized portions for uniform cooking. Toss them gently with olive oil, salt, pepper, and herbs.

Here are some nutritious vegetable staples you can encompass:

Carrot adds natural sweetness and shade.

Potatoes make the meal greater, filling, and comforting.

Broccoli balances the dish with a clean, barely crunchy texture.

4. Bake the whole lot collectively.

Preheat the oven to 190°C (375°F). Place the mini meatloaves on one side of a massive baking tray and the vegetables on the opposite side (or use trays if wished). Bake for 25–35 mins, or till the beef is completely cooked and the greens are tender and lightly roasted.

Five. Add glaze (optional).

For more taste, brush the mini meatloaves with a short glaze manufactured from ketchup, a bit of honey, and mustard over the last 10 minutes of baking.

Serving Ideas

Serve the mini meatloaves warm with roasted veggies at the faucet. You can also pair them with rice, mashed potatoes, or a light yogurt sauce for extra creaminess.
