Tamari-Ginger Meatball & Eggplant Casserole

A rich, savory casserole combining juicy meatballs, tender eggplant, and a deeply flavored tamari-ginger sauce. The result is umami-packed, slightly sweet, and warming—best with rice or noodles.

Ingredients

For the meatballs:

500 g lean chicken, turkey, or pork

1 egg

1/3 cup breadcrumbs

2 cloves garlic, minced

1 tbsp sparkling ginger, grated

2 tbsp chopped spring onion

1 tbsp tamari (or soy sauce)

half a tsp black pepper

Salt to flavor

For the casserole:

2 medium eggplants, cut into chunks

2 tbsp oil (for roasting or frying eggplant)

1 onion, sliced

3 cloves garlic, minced

1 tbsp ginger, grated

1–2 purple chilies (elective)

Sauce:

1/3 cup tamari sauce

2 tbsp honey or brown sugar

1 tbsp rice vinegar or lemon juice

1 cup chicken or vegetable broth

1 tsp sesame oil

1 tbsp cornstarch blended with 2 tbsp water (slurry)

Optional garnish:

Sesame seeds

Chopped coriander or spring onion

Instructions

1. Prepare the meatballs.

In a bowl, blend ground meat, egg, breadcrumbs, garlic, ginger, spring onion, tamari, salt, and pepper. Mix till simply blended (don’t overmix, or meatballs turn out to be tough).

Shape into small balls (approximately 1–1.5 inch in diameter).

Heat a pan with a touch of oil and gently brown the meatballs on all sides. They don’t want to be fully cooked, though. Set aside.

2. Cook the eggplant.

You can do both:

Roast in oven at 200°C for 20–25 minutes with oil, or

Pan-fry until golden and tender.

Eggplant should be smooth and slightly caramelized.

Three. Make the sauce base.

In a massive pan or wok, warm oil. Add onion and sauté till tender.

Add garlic, ginger, and chili. Cook for 1–2 mins until fragrant.

Add tamari, honey, vinegar, broth, and sesame oil. Stir properly and convey it to a gentle simmer.

4. Combine the whole lot.

Add meatballs and eggplant into the sauce.

Simmer, blanketed, for 10–15 mins till meatballs are completely cooked and flavors integrate.

Add cornstarch slurry and stir till the sauce thickens and becomes sleek.

Five. Bake (optionally available but encouraged)

Transfer everything right into a casserole dish and bake at 180°C for 10–15 mins for deeper taste and mild caramelization on top.

Egg noodles or soba

Garnish with sesame seeds and sparkling herbs.
